Cachaca

in Liquor

Cachaca is the national alcohol of Brazil and it distilled from raw sugar cane juice.  The classic drink is

Caipirinha
2 oz Cachaca
1 lime
2 tsp fine sugar

Cut the lime into 6 wedges.
Place the lime and sugar into your glass and mash/muddle the ingredients together.
Add crushed ice equal to your glassand then the Cachaca.

You can substitue the fruit for strawberry,  pineapple, kiwi, mango, etc.

You can make many other drinks by substituting your normal liquor with Cachaca.

Margarita
1.5 oz Cachaca
.5 oz Triple Sec
1 oz Lime Juice
Salt

Rub the rim of a cocktail glass with lime juice, and dip in salt.
Shake all ingredients with ice, strain into the glass and serve.

The Majestic
3 small diced pineapple pieces
2 oz Cachaca
.5 oz Chartreuse (yello)
.5 oz brown sugar syrup
.5 oz fresh squeezed lime juice
1 dash orange bitters
1 oz seltzer water

Muddle pineapple in shaker.
Add next 5 ingredients and shake vigorously with ice.
Strain liquid into highball glass adding seltzer water while pouring.
Garnish with pineapple frond and serve.

Royale
1 whole strawberry
2 oz Cachaca
.5 oz brown sugar syrup
.5 oz fresh squeezed lemon juice
1 oz sparking wine

Muddle strawberry into shaker.
Add next 3 ingredients and shake vigorously with ice.
Strain liquid into highball glass adding sparkling wine while pouring.
Garnish with lemon and serve.

Gingerade
1 tsp raspberry preserves
2 o Cachaca
.5 oz Cointreau
.5 oz brown sugar syrup
3 dashes Angostura bitters
1 oz fresh squeezed lime juice
1 oz ginger beer

Shake first 6 ingredients vigorously with ice and pour all contents into a highball glass adding the ginger beer as you pour.
Garnish with orange wheel and serve.

The Beginning of the End
1.5 oz Cachaca
.75 oz fresh lime
.5 oz simple syrup
.5 oz egg white
.25 oz amaretto
1 rounded tsp apple butter

Shake ingredients well with cracked ice.
Double strain into a chilled cocktail glass.
