Rum is a distilled beverage made from sugarcane by-products such as molasses and sugarcane juice by a process of fermentation and distillation.  Molasses rum is the most common.  The minerals help contribute to the final flavor in the rum.  Sugar cane rum is mostly made in Haiti and Martinique and usually are smoother than molasses rum.

Rum is often aged in oak and other barrels.

Rum production occurs in and around the Caribbean and in several South American countries, such as Colombia, Venezuela, Guyana and Brazil. There are also rum producers in places such as Australia, Fiji, the Philippines, India, Reunion Island, Mauritius, and elsewhere around the world.

There are several types of rum.
White Rums – Light-bodied.  Clear and subtle.  Used as a mixer and does well with fruit flavors.
Golden Rums (Amber rums) – Medium-bodied.  Several years of oak aging helps it become smooth and mellow.
Dark Rums – Full bodied and rich.  Usually consumed straight.
Spiced Rums – Infused with spices or fruit flavors.
Anejo (Aged) Rums – Blends from different vintages or batches.  The age statement on the bottle is for the youngest rum in the blend.

Rum Regions
The Caribbean is the epicenter of world Rum production. Virtually every major island group produces its own distinct Rum style.
Barbados – Light and sweet. Rum distillation began here and the Mount Gay Distillery, dating from 1663, is probably the oldest operating Rum producer in the world.
Cuba – Light bodied, crisp and clean
Dominican Republic – Full bodied and aged.
Guyana – Richa and heavy Demerara Rums (named for local river). Produced from both pot and column stills. Aged for extended periods (25+ years).
Haiti – Double-distilled in pot stills. Aged in oak for 3+years. Full flavored and smooth.
Jamaica – Rich and aromatic. Usually produced in pot-stills. Used often for blending.
Martinque – Both pot and column stills used. Both sugar cane and molasses are used. Often aged in French brandy casks for 3+ years.
Puerto Rico – Light, dry rums from column stills. White rums by law must be aged 1+ years and dark rums must be aged 3+ years.
Trinidad – Light
US Virgin Islands – Light, mixing rums.
Nicaragua – Medium-bodied.
