Tequila is made by distilling the fermented juice of agave plants found in Mexico. Mexican law requires that tequila is produced only in the state of Jalisco as well as Guanajuato, Michoacan, Nayarit and Tamaulipas. Tequila can be produced between 35-55% alcohol content (70-110 proof) although most are 38-40% alcohol.

There are two basic categories of tequila – mixtos and 100% agave. Mixtos are made with 49% of the alcohol derived from other sugars and the other 51% is drived from agave. 100% Agave will be labeled as such and by Mexican law it must be bottled in Mexico.

Classifications
Silver (Blanco) – Clear. Little (no more than 60 days in stainless steel tanks) or no aging. Can be either 100% agave or mixto. Primarily used for mixing.
Gold Tequila – Unaged silver tequila that has been colored and flavored with caramel.
Reposado (Rested) – Aged in wooden tanks/casks for at least 2 month. Better quality is usually aged 3-9 months. Can be a mixto or 100% agave.
Anejo (Old) – Aged in wooden barrels (usually old Bourbon barrels) for a minimum of 12 months. The best are aged 18 month to three years for mixtos and up to four years for 100% agaves.
